Nikki’s Kitchen: Zucchini Bread

It’s that time of year…the time where either you or someone you know has an overabundance of zucchini. Well, do I have the perfect recipe for you! It’s my grandma’s zucchini bread recipe. Hope you enjoy…. I know I always have.

3 cups flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. (1 Tbsp.) cinnamon
3 eggs
1 cup vegetable oil
2 cups sugar
1 1/2 tsp. vanilla
2 cups grated zucchini

Grease and flour two 8×4-inch pans. Preheat oven to 350 degrees. dry mix
Sift flour, salt, baking powder, baking soda, and cinnamon together.

Beat eggs, oil, vanilla, and sugar in a large bowl. Add dry ingredients to wet mixture, and beat well.

Stir in zucchini and combine.

Bake 40-60 minutes or until tester comes out clean.
